Culinary Arts Students
Edenton, North Carolina — Guests attending “An Evening in Edenton” on Thursday, Nov. 7 at College of The Albemarle’s (COA) Edenton-Chowan Campus were treated to an Italian gourmet meal prepared by Culinary Arts students.
Robin Zinsmeister, campus administrator of the Edenton-Chowan Campus, welcomed the 35 guests in attendance and thanked them for participating in the evening’s event. She explained that the event would showcase the tremendous amount of learning the culinary students had already accomplished, after only receiving 58 days of classroom instruction thus far.
Chef Leslie Lippincott, Associate Professor/Program Coordinator of the Culinary Arts program, shared that the students prepared menu items, with each student contributing to the “big flavors” incorporated within the dishes for the night’s theme, “A Culinary Jaunt Through Italy.”
The meal included Arugula and Pear Salad, Shrimp and Tortellini fra Diavolo, Arancini with salsa marinara, Venetian Stuffed Shells, Veal Saltimbocca, Delicata “Donuts,” Short Rib and Mushroom Ragu, Mini Sausage Calzones and Tiramisu for dessert. At the conclusion of the meal, the eight culinary students (who began preparing the meal at 8 a.m.) explained their process for making each dish. Guests were also asked to fill out a short survey about their experience including quality of food and presentation, student service and favorite dish.
“We are thrilled to see An Evening in Edenton continue to grow and attract more attendees,” said Lippincott. “Guests this year ranged across a broad spectrum of fields, including educators from COA’s service area, county commissioners, COA Foundation members, community members and COA staff. This special evening offers our students the opportunity to participate in the planning and organization of a catered event, from both front and back-of-house perspectives. Additionally, they showcase newly acquired cooking techniques and skills to create a delicious culinary experience for our guests.”
